2 tablespoons kosher salt 1 tablespoon freshly ground black pepper 1 tbsp smoked paprika 2 teaspoons onion powder 1 teaspoon garlic powder 1 tablespoon brown sugar 1 teaspoon cayenne - Wrap with parchement paper and roast at 225 F. for 1.75 hours per pound
