Coconut Fish Curry
- Heat olive oil in large saucepan over medium-high heat.

Add
chopped onion : 1 cup, minced ginger : 1 tbsp, minced garlic : 4 cloves, curry powder : 1 tbsp, paparika/cayenne : 1 tsp, cumin seed : 1 tsp,Saute 2 minutes.
- Add
cauliflower, tomatoes, and other vegetables; sauté 1 minute - Stir in water,
coconut milk: 1 can; bring to a boil. - Cover, reduce heat, and simmer 20 minutes or until the vegetables are tender.
- Stir in
basa fillet: 1-2 bagsand simmer for another 5 minutes. -
Stir in
lime juice, cilantro, fish sauce : 2 tbsp, lemongrass paste : 1tbsp, saltAnd serve with rice.
