Coconut Fish Curry

  1. Heat olive oil in large saucepan over medium-high heat.
  2. Add

    chopped onion    : 1 cup,
    minced ginger    : 1 tbsp,
    minced garlic    : 4 cloves,
    curry powder     : 1 tbsp,
    paparika/cayenne : 1 tsp,
    cumin seed       : 1 tsp,

    Saute 2 minutes.

  3. Add cauliflower, tomatoes, and other vegetables; sauté 1 minute
  4. Stir in water, coconut milk: 1 can; bring to a boil.
  5. Cover, reduce heat, and simmer 20 minutes or until the vegetables are tender.
  6. Stir in basa fillet: 1-2 bags and simmer for another 5 minutes.
  7. Stir in

    lime juice, 
    cilantro, 
    fish sauce : 2 tbsp, 
    lemongrass paste : 1tbsp, 
    salt

    And serve with rice.
